Quarantine Cooking #4! Red Velvet Sandwich Cookies

Your favorite baking series is back! This week I am sharing cookingclassy.com's recipe for red velvet sandwich cookies. This recipes yields 12 sandwich cookies and will take about an hour.


Ingredients:

Cookies

1 1/2 cups all-purpose flour

2 Tbsp unsweetened cocoa powder

1 tsp baking soda

1/4 tsp baking powder

1/4 tsp salt

1 cup granulated sugar

1/2 cup unsalted butter, softened

1 large egg

1 Tbsp liquid red food coloring (gel works fine it's just more annoying to get out, but you need a lot less)

Frosting

2 cups powdered sugar

1/2 cup vegetable shortening

1/2 cup unsalted butter, softened

1 Tbsp hot water

1/2 tsp vanilla extract


Directions:

  1. Preheat oven to 375 degrees and line two cookie sheets with either silpat liners or parchment paper.

  2. In a mixing bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt. In an electric mixer beat butter and sugar until fluffy. Mix in egg and food coloring. With mixer on low add dry ingredients and mix until combined.

  3. Shape dough into balls (about a tablespoon each). Place the balls 3 inches apart on the cookie sheets. (I did six balls per sheet). Use your fingers to evenly flatten the dough balls slightly.

  4. Bake until the edges begin to set-- about 7-8 minutes. Cool on cookie sheets for several minutes before transferring to a wire rack to finish cooling.

  5. For the frosting: in an electric mixer, beat the powdered sugar, shortening, butter, water, and vanilla until light and fluffy.

  6. Scoop the frosting into a pastry bag fitted with a 1/2 inch round tip. Flip half of the cookies over and pipe 1 Tbsp (or the desired amount) of frosting. Place the remaining cookies on top to create sandwiches. Store in an airtight container and enjoy!
