Quarantine Cooking!

I know that being sheltered in place for over two months can be incredibly boring! So I have decided to post once a week about a new recipe or idea that may keep you entertained during this time.

Today we have a recipe from my wonderful mother on how to make raspberry muffins (it makes about 12-18 muffins depending on how much batter you place in each muffin cup).


First, mix the dry ingredients.

2 cups flour

2 teaspoons baking powder

1/4 teaspoons salt


Then, in a separate bowl, mix the wet ingredients.

1 stick butter

1 cup granulated sugar

2 large eggs (add one egg in at a time!)

1 teaspoon vanilla


Add the dry ingredients alternating with 1/2 cup of milk to the wet ingredients.

Fold in 2 and 1/4 cup raspberries

2 tablespoons of raw sugar for the top of the muffin


Bake at 375 degrees for 18-20 minutes and enjoy!
