Pumpkin Muffins!

Since it is officially (and finally) fall, I thought that I would share my amazing pumpkin muffin recipe from lovelylittlekitchen.com :)

Ingredients

1 3/4 cups all purpose flour

1 cup sugar

1/2 cup dark brown sugar

1 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon nutmeg

2 eggs

1 15 ounce can of pure pumpkin puree

1/2 cup coconut oil, melted

1 teaspoon vanilla extract

Directions

1. Preheat oven to 375 degrees F. Line muffin tin with 12 paper liners.

2. Whisk together the flour, salt, sugars, baking soda, and spices in a medium sized bowl.

3. In another bowl, whisk the pumpkin puree, coconut oil, and vanilla extract.

4. Pour wet ingredients into dry. Mix until just combined.

5. Fill until nearly full using a large scoop.

6. Bake 20-22 minutes. Use a toothpick to make sure they are baked all the way (should come out clean).
